Unicorn Cake

So on Monday afternoon, I was commissioned to make a cake for Tuesday evening, I decided to accept, since at the time I didn't have too much going on , until later in the week when I would need to get ready for the breakfast with Santa bake sale on December 2. Just as my luck would have it I get a call that I needed to go to work, so that meant that I only had an evening to pull of this cake!! Some people might panic but me nah I will procrastinate a bit, and scrub down my kitchen, I also spent some time looking at inspiration ideas since the parent said child wanted a unicorn cake. I found these 2 beauties and sent them to the mom.
Child decided she liked the purple one. As I follow the like I find that it’s a cake by none other than one of my favorite YouTube cake decorations Rosanna Pansino from Nerdy Nummies. I watched her tutorial for inspiration on where to start.
When I finished cleaning the kitchen and making supper I got started. A marble cake was requested, which honestly has not been my specialty until I baked this cake. I followed my vanilla recipe, and modified it appropriately for the chocolate. Oh and I decided to do triple the recipe, which was a bit much since I ended up with three 8 inch round cakes and 2 dozen cupcakes which I have frozen for a couple other projects this week… More blogs to come this weekend!
I made a traditional vanilla custard filling and about 8 cups of buttercream icing. Once the cakes were cooled and leveled I layered them, hoping for an amazingly tall cake like Rosanna’s instead despite the 3 layers it looked like my regular 2 layer cake, which I was ok with.
The next trick was getting the icing to be perfectly smooth. Problem was my icing was a bit thick and it did not want to become perfectly smooth like the photo.
Then I had tons of fun with flowers and swirls and decorating the top, since my edges were not perfectly smooth I used it as an opportunity to give the unicorn a bit of bangs, then I got carried away with the back, which looked beautiful in my opinion.
Finally the horn and ears, I was happy that it only took 2 tried to get the horn correct. I used marshmallow fondant and I folded in a bit of Gum Tex (to help harden it). The horn and ears stayed a bit soft and pliable, so I think I might have needed to use a bit more Gum Tex or waited until morning to paint the color on? Not sure if you have ideas about this let me know.
I finished the cake in record from baking to layering to decorating was a total of 2-3 hours. I was happy with how it turned out considering:
